This slice is a great low sugar treat which would make a great lunch box treat. It also happens to be dairy and gluten free. The best thing about this slice is that it is very easy to make, just mix it all up in the one bowl! Ingredients 4 eggs ¼ cup sugar ¾ cup dessicated coconut 1 cup almond meal 1 tsp baking powder 1 cup blueberries Method Beat eggs and sugar until they are a bit frothy. Add coconut, almond meal and baking powder, try to mix baking powder through dry ingredients a little. Fold together with…

This very moist maple cinnamon cake will make a super addition to your recipe repetoire. It is not only delicious, but very easy to make and freezes beautifully. It is actually an adaptation of a banana cake recipe which I tweaked when I didn’t have any bananas on hand. Even if you do not need to eat gluten free, this cake is fantastic, you could replace the gluten free flour with regular flour if you like. Because this cake freezes so nicely, I like to make one up when I have excess eggs on hand, then cut it in half…

This lovely moist chocolate cake is very easy to make and always turns out beautifully.  It can be made either gluten free or regular depending on what you need.  It makes quite a large cake, I usually make it in a  12 x 9 1/2 inch rectangular baking tin.   It is a great cake to make on the weekend for a treat and then to have plenty left over to wrap and freeze for lunch box snacks.  Home baking is a great way to reduce your grocery bill significantly, I just noticed that a cake a third of this…

Anzac biscuits are a really easy and frugal biscuit to make at home, and they are so much nicer than the store bought variety.  They make great lunch box snacks, keep well in an air tight container and freeze really well.  Whenever I make them I make a double batch in order to have plenty to freeze.  You can freeze them either as baked cookies or in raw form in a “cookie log” for future baking.  With this batch I made I baked half, then froze half the mixture in log form. The beauty of freezing cookie logs is that…

Yesterday I spent part of the morning baking a few things to put in the freezer for morning tea snacks for future weeks.  These easy banana muffins were inspired by the overripe banana which was languishing in the fruit bowl!  This recipe is nice and easy since it’s just a matter of mashing the banana in the bottom of a large mixing bowl then adding all the ingredients to the same bowl.  I love one bowl recipes!  This recipe makes 12 large muffins, which freeze well.  I wrap them individually in cling wrap and freeze them for lunch box snacks.…
