Anzac biscuits are a really easy and frugal biscuit to make at home, and they are so much nicer than the store bought variety.  They make great lunch box snacks, keep well in an air tight container and freeze really well.  Whenever I make them I make a double batch in order to have plenty to freeze.  You can freeze them either as baked cookies or in raw form in a “cookie log” for future baking.  With this batch I made I baked half, then froze half the mixture in log form. This slice makes a great quick and easy lunch box treat.  I usually make up two slices at once, and then keep it in the freezer to be defrosted when needed.  I often cut one slice in half and wrap it in a double layer of cling wrap, then leave it in the freezer.
