This year we have had a wonderful harvest of white peaches.  Unfortunately, I didn’t thin them out when they were young, so the result was that the peaches were numerous but small.  However, despite being small they are delicious, fresh and organic!  The harvest was around 6 kilos, plus some that fell off the tree and were fed to the chooks.  I decided to make a large batch of peach jam, which will just about supply us with jam for the year! Here is a wonderful slice which is easy to make, thrifty and relatively healthy.  I had some homemade jam left over from last year, which I wanted to use up; as well as quite a supply of whole meal flour, which needed to be used sooner rather than later.  Today I solved both problems and made a double quantity of this lovely slice, and have cut it into pieces to freeze for later use.  I find it is really handy to have some homemade baked goods in the freezer for when you have unexpected visitors or you are running a…

This is a fun and easy slice to make for a treat.  It can be easily converted to a gluten free recipe if you wish.  I made this on the weekend and it was a hit!  I substituted homemade plum jam because that is what I had on hand. I also used up some extra large marshmallows, which were in the cupboard.  I just cut the marshmallows into slices to make them work.
