This super easy self saucing pudding makes a lovely desert on a winter night.  I had some opened canned peaches in the fridge and decided to experiment to see if I could use them to make a self saucing pudding, the result was pretty delicious!  I would imagine this would work just as well with any canned fruit you like. This has become the favourite cookie recipe in our house. The great thing about this recipe is that you can make some simple substitutions to make a variety of delicious cookies. Once you’ve made the cookie dough it can be frozen in “logs” for a great, quick homemade treat. This is really handy to have on hand for unexpected guests; you can have cookies on the table in no time at all! Banana muffins are a wonderful use for over-ripe bananas, in fact the more sorry looking, the better!  These muffins are both simple and delicious.  Next time you have some over-ripe bananas give them a whirl, you’ll be very pleased with the results.  Either regular SR flour or gluten free flour works equally well, so feel free to use whichever suits you and your family.  I find the Aldi brand “Has No” gluten free flour yields excellent results and is very economical.  The recipe also works well as a loaf cake, just adjust the cooking time accordingly.
