This very moist maple cinnamon cake will make a super addition to your recipe repetoire. It is not only delicious, but very easy to make and freezes beautifully. It is actually an adaptation of a banana cake recipe which I tweaked when I didn’t have any bananas on hand. This recipe is an adaptation of the whole orange cake recipe from Rhonda at Down to Earth.  The orange cake is delicious and super easy to make, but at the moment I have an abundance of mandarins so I thought I’d make an adaptation.  I washed the mandarins and cut them in half to remove most of the seeds.  The mandarin version turned out beautifully and is a great way to use up mandarins, so why not give it a try while mandarins are in season.  This cake works well with either regular self raising flour or gluten free flour…
