This lovely slice makes a wonderful lunch or snack.  It is also a great way to use up an abundant harvest of zucchini and eggs!  Like most of my recipes this one is super thrifty as well, the entire dish would cost under $4 or about half that if you have homegrown zucchini and eggs! This year we have had a wonderful harvest of white peaches.  Unfortunately, I didn’t thin them out when they were young, so the result was that the peaches were numerous but small.  However, despite being small they are delicious, fresh and organic!  The harvest was around 6 kilos, plus some that fell off the tree and were fed to the chooks.  I decided to make a large batch of peach jam, which will just about supply us with jam for the year! Chicken Schnitzel is a favourite in our house, and this gluten free version is so much nicer than anything you can buy.  The combination of parmesan cheese and almond meal makes a really tasty coating and you’d never know you were eating gluten free!  I used chicken tenderloin since I bought a large quantity on sale for $4.99 a kilo recently (yay!), but you can use chicken breast too.  If you use chicken breast, just slice it into pieces about a half inch thick before tenderizing. Moussaka is a great family meal.  It is relatively easy to make, healthy, thrifty and the kids will love it.  This recipe is one my mum used to make when we were kids back in the seventies, in our lime green kitchen!  This is the “Australianised” version which uses potatoes rather than egg plant, but you can feel free to use egg plant if that grabs you! This recipe is a wonderful twist on the traditional pavlova.  Although it may appear a bit tricky, it is actually not very difficult to do.  This  makes a great dessert for special occasions, which can be made a day ahead and kept in the fridge.  I may do this for a desert at Christmas, since it looks and tastes spectacular and yet can be prepared ahead.  Despite its fancy appearance, this desert is really very thrifty too, especially since our chickens produced the eggs and we grew the passionfruit in the back yard!  Just a note if you are new…

These veggie fritters make a quick, easy and relatively healthy lunch or snack. I made these up in a jiffy today and they were delicious. My zucchini plants are going crazy, so I thought I would pick some of the new little zucchinis and use them for lunch. The recipe calls for roughly two cups of finely grated carrot and zucchini, but you could really use any vegetable you fancy. As you may have picked up I am a huge fan of the humble slow cooker. Slow cookers enable you to make a lovely family meal with minimal time actually in the kitchen. This can be such a help when you have a lot on. I know that I have a bit of a busy week ahead so I used this morning to prepare a few dinners ahead of time.
