I have had a really enjoyable day at home today.  I tried pickling beetroot for the first time and it turned out just great!   Unfortunately, I had only planted a small amount of beetroot, so my first attempt of pickling only yielded one jar … but wow it brought me such satisfaction.  Next time I’ll know to plant copious amounts of beetroot, since it grows really easily, doesn’t seem to be worried by pests, the green tops make great chicken feed and the pickling process is pretty simple.  I tasted one of the cooked beets with a little pickling liquid and it was delicious too.  Sounds crazy but I am going to save this one jar to be enjoyed on Christmas day, but meanwhile I will plant plenty more beetroot in the garden.

I got the directions and recipe for pickling beetroot from Rhonda Hetzel’s Down to Earth site, you can find them here.  The directions are very straight forward and worked really well.  I halved the quantity of pickling liquid since I only had a small amount of beets.  I also used brown sugar, apple cider vinegar and mixed spice since Rhonda’s recipe leaves a bit of leeway in which exact ingredients you use.

It was so enjoyable to try a new creative endeavour today as well as work through some of the more ordinary jobs in our home.  I try to keep a nice balance between how much time I spend out and how much time I spend at home, so that I have time to enjoy my home and some of the opportunities for creativity that it affords.  For me that is one of the absolute benefits of trying to live simply!
