The temperature on the south coast of NSW has been dropping, over these past few weeks.  As winter begins it is a lovely time to cook warm and hearty casseroles for the family.  Believe it or not you don’t need a special sachet of special flavour mix to make a delicious casserole. The key to a good casserole is browning you meat and onions in the casserole dish to create a lovely caramelized flavour.  The easiest way to do this is in a Dutch oven or cast iron casserole dish which you can use on the stove top and then place in the oven.  Although I love cooking from scratch, I am also all for making it simple and efficient, so a Dutch oven is a wonderful tool, only one dish to wash up!  This particular recipe is easy, delicious and very economical.  This recipe serves 4.




  • 6 sausages
  • 1 onion (diced)
  • 1 clove of garlic (minced)
  • 2 large carrots (sliced)
  • 1 ½ tbsp flour or gluten free flour
  • ½ 400g can diced tomatoes
  • 1 cup water
  • 1 tsp oregano
  • ½ tsp salt
  • Dash of oil



  1. Brown sausages lightly in a small amount of oil in your Dutch oven
  2. Remove sausages and set aside
  3. Brown onion, garlic and oregano lightly
  4. Slice sausages and return to pan
  5. Add flour and stir a little
  6. Add water and tomatoes and stir, scraping the bottom to release the “brown bits” from the bottom of the pan
  7. Add salt and carrots and any other chopped veg you’d like
  8. Place in the oven on 180 C for 45 mins



Serve with mashed potatoes for a lovely hearty winter meal.
