Winter is a great time to bake a simple yet delicious pudding for the family.  This pudding only takes about 10 minutes to prepare, then just pop it in the oven for a warming treat. It is a very economical recipe probably under $2.00 for the whole thing, but you would never know that by the gooey and delicious result!  I use the Aldi brand gluten free self raising flour, but this recipe will work well with regular flour if you don’t need to eat gluten free. To keep things simple I just estimate the butter and melt it in a cup in the microwave (this saves on washing up as I don’t have a dishwasher!).




  • 400g can of pineapple rings
  • 3 heaped tbsps brown sugar
  • 1 cup SR flour or gluten free SR flour
  • ½ cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • ½ cup milk
  • 50g melted butter



  1. Grease a medium sized casserole dish
  2. Place pineapple rings around base of casserole dish reserving the juice to be used later
  3. Sprinkle brown sugar over pineapple rings
  4. In a medium mixing bowl mix flour, sugar, vanilla, egg, milk and melted butter and mix with a wooden spoon until well combined
  5. Pour batter mixture over pineapple and brown sugar
  6. Pour remaining juice over batter, using the back of a spoon to help spread juice evenly
  7. Bake on 180C for 45-50 minutes, until a cake skewer comes out clean from cake layer




Serve warm with ice cream or cream
