Yesterday I spent part of the morning baking a few things to put in the freezer for morning tea snacks for future weeks.  These easy banana muffins were inspired by the overripe banana which was languishing in the fruit bowl!  This recipe is nice and easy since it’s just a matter of mashing the banana in the bottom of a large mixing bowl then adding all the ingredients to the same bowl.  I love one bowl recipes!  This recipe makes 12 large muffins, which freeze well.  I wrap them individually in cling wrap and freeze them for lunch box snacks.



  • 1 ripe banana
  • 1/2 cup oil
  • 2 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1/3 cup coconut
  • 2 cups SR flour



  1. Preheat oven to 180 C/170 C (fan forced)
  2. Mash banana in bottom of large mixing bowl
  3. Add oil, milk, eggs, sugar, coconut and flour
  4. Gently mix with a wooden spoon until combined, making sure you don’t over mix
  5. Fill greased or lined muffin tins 2/3 full with mixture
  6. Bake for approx. 20 mins, done when a cake skewer comes out clean
