This super easy slice came about on a bit of a whim.  As you know I have just cleaned out my pantry and I found a few bits and pieces that needed to be used up.  Making a slice with some of the odd bits of dried fruit was a good way to use them up and the slice turned out to be really yummy and moist!  Don’t be afraid to just substitute whatever spare dried fruit you have.  It is a really easy recipe, just throw all the ingredients in one bowl and give it a bit of a mix with a wooden spoon, it seriously came together in just minutes.  I used gluten free SR flour, but I am sure regular flour or wholemeal flour would work just as well.  Don’t worry if you don’t have any psyllium, I only put it in to use some up!

Ingredients

  • 2 1/2 cups dried fruit (I used dried apricots, dates and sultanas)
  • 1 cup milk
  • 2 eggs
  • 1 cup SR flour (I used Aldi Gluten Free)
  • 1/2 cup sugar
  • 2 tbsp psyllium husks (optional)
  • 1/2 cup oil (I used rice bran)
  • 2 tbsp coconut

Method

  1. Place dried fruit in a mixing bowl
  2. Pour over milk and oil
  3. Let sit for a few minutes
  4. Add all other ingredients
  5. Mix with a wooden spoon until combined
  6. Place in a greased/lined slice pan and bake on 180 C/350 F for 25 minutes
