This super easy self saucing pudding makes a lovely desert on a winter night.  I had some opened canned peaches in the fridge and decided to experiment to see if I could use them to make a self saucing pudding, the result was pretty delicious!  I would imagine this would work just as well with any canned fruit you like. This recipe can be prepared really quickly as it is hand mixed in one bowl, then poured over the peaches. A quick way to melt your butter is in a cup in the microwave for 30 seconds. As with most of my recipes this recipe is both simple and economical, so I would encourage you to give it a try!


  • 400 g can of sliced peaches
  • 1 cup SR flour (or SR gluten free flour – I like the Aldi brand best)
  • ½ cup sugar
  • 50 g butter melted
  • 1 tsp vanilla
  • 1 egg
  • ½ cup milk


  1. Grease a medium sized casserole dish
  2. Spoon peach slices into bottom of casserole dish, leaving most of juice in the can for later use
  3. Place flour, sugar, egg, vanilla, milk and melted butter in a medium sized mixing bowl
  4. Give ingredients a quick stir with a wooden spoon until well combined
  5. Pour batter over peaches
  6. Pour remaining juice over the back of a spoon onto the batter (juice will sit on top of batter)
  7. Bake on 180 C for 40-45 mins (Done when cake skewer placed into cake part comes out clean)
