This is a really quick and easy soup to make from scratch and it is totally delicious.  It is super frugal too, but you’d never tell from the taste!  This large batch would cost out at under $3 and will yield a large saucepan of soup.  This will serve us for lunch all week!  Even better, it took less than half an hour to make!  You could add more chorizo if you like, but 1 chorizo worked just fine.  Served with some crusty bread, this makes a hearty lunch or dinner on a chilly day.


  • 1 chorizo sausage
  • Splash of olive oil
  • 1 large onion
  • 4 large potatoes
  • 3 carrots
  • 2 cloves garlic
  • 8 cups water
  • 2 ½ tsp salt
  • Chilli flakes (optional)
  • 2 tbsp corn flour
  • ½ cup powdered milk


  1. Brown chorizo in a large saucepan with a little oil
  2. Remove and slice into rounds
  3. Brown onion, chorizo and garlic on medium heat until lightly browned
  4. Add 6 cups water
  5. Add peeled and diced potatoes and carrots
  6. Add salt and a shake of chilli flakes if desired
  7. Bring to the boil, then simmer until vegetables are cooked through
  8. Dissolve corn flour in 1 cup of cold water, add to soup and stir to thicken slightly
  9. Dissolve powdered milk in 1 cup of water, add to soup
  10. Stir and heat through

Serve with crusty bread and enjoy!
