This slice makes a great quick and easy lunch box treat.  I usually make up two slices at once, and then keep it in the freezer to be defrosted when needed.  I often cut one slice in half and wrap it in a double layer of cling wrap, then leave it in the freezer. If anyone drops in unexpectedly you have a homemade treat ready to serve in minutes. The other slice I cut into fingers and wrap individually for lunch box snacks. You can make serious savings on your grocery bill by making lunch box snacks rather than purchasing pre-packaged items.

It doesn’t have to take too much time, especially if you make a double quantity. Also, cooking with kids can be a great way to teach your children lifelong skills, plus spend time doing a fun activity together.  If you don’t need to make the slice gluten free, you can substitute one cup of rolled oats, for one of the cups of coconut, to add a little more goodness!

Simple Chocolate Slice (Makes two slices, can halve quantity to just make one slice if you like)


  • 6 Weetbix or 6 GF Weetbix (crushed)
  • 2 c SR flour or 2 c gluten free SR flour
  • 2 c shredded coconut
  • 1 c sugar
  • 4 heaped tbsps cocoa
  • 330 g / 11 oz butter (melted)


  1. Place all dry ingredients into a large bowl
  2. Mix dry ingredients till combined then make a well in the centre
  3. Melt butter (I cheat and melt it in the microwave in a large cup)
  4. Pour butter into dry ingredients and mix well
  5. Press into two lined 7” x 11” slice trays
  6. Bake for 15 minutes at 180 C / 350 F
  7. Ice while still warm for best results


  • 2 c icing sugar
  • 4 tbsp cocoa
  • 4 tbsp boiling water

Mix all ingredients in a medium bowl, will be quite thin

Pour onto slice and spread to cover

Cut into squares or bars
