This is a fun and easy slice to make for a treat.  It can be easily converted to a gluten free recipe if you wish.  I made this on the weekend and it was a hit!  I substituted homemade plum jam because that is what I had on hand. I also used up some extra large marshmallows, which were in the cupboard.  I just cut the marshmallows into slices to make them work. The marshmallows I used were from Costco and were gluten free, but if you don’t need to eat gluten free then any marshmallow will be fine.


  • 3 Weetbix, crushed (or Gluten free Weetbix)
  • 1/3 c sugar
  • 1 c desiccated coconut
  • 1 c plain flour(or Gluten free flour)
  • 175g butter, melted
  • 1 c raspberry or strawberry jam
  • 1 pkt marshmallows (or Gluten free marshmallows)


  1. Preheat oven 180C / 350 F or 160C / 300F (fan forced)
  2. Combine crushed weetbix, flour, sugar, and coconut in a large bowl
  3. Add melted butter
  4. Stir until mixture is thoroughly moistened
  5. Press into a lined slice tray
  6. Bake for 25-30 mins, until golden brown
  7. Spread with jam while slice is still warm
  8. Top with marshmallows and return to oven for approx. 7 mins
  9. Cool slice in the pan
  10. Cut into squares to serve
